I’m Jenny and I live in the beautiful foothills of the Ozarks on a small fifth generation homeplace of my husband’s family. I am in love with gardening, herbs, healthy living, my family & Jesus Christ! We have two beautiful boys that are in love with the outdoors and their daddy 🙂 I homeschool our oldest son, make baskets, soap, garden and try to keep our home in order. One of my favorite things to do is to make homemade bread! And that is what my first post is about. A step by step tutorial to making awesome 100% whole wheat bread. Here’s my favorite recipe! It makes 4 delicious loaves of homemade, healthy bread. Recipe: 4 cups warm water, 4 tablespoons yeast, 1/2 cup milk powder, 2/3 cup oil or melted butter, 1/2 cup honey, 2 tablespoons sea salt (I prefer Real Salt), 8-10 cups freshly ground flour. Now for the fun part! 1. Disolve your yeast in your warm water. 2. Let sit until good and bubbly. (I use my KitchenAide Mixer to make bread dough in). 3. Add powdered milk, honey, oil, salt and about 4-6 cups of flour. 4. Mix well. 5. Add enough flour to form a very thick batter. 6. This is your sponge, cover and let sit for 15 minutes. 7. Oil your bowls you will use for the first rising. 8. After the time is up, gently knock down with spoon and add more flour, 1 cup at a time, while you are mixing at dough speed. 9. Add flour until a thick dough forms and wraps around the dough hook. 10. Knead at dough speed for about 2 minutes adding a dash of flour as needed to prevent sticking. 11. Do not overknead, dough will be stickier with 100% whole wheat. 12. Place into oiled bowls, allowing room to double in size, turning to coat. 13. Cover with plastic wrap or a damp towel and put someplace cozy (my warm oven). 14. Allow to rise for 45-60 minutes or until doubled. 15. Punch down and divide into 4 sections, flatten out and roll up, turning under ends. 16. Place into oiled bread pans and cover with wrap or towel. 17. Allow to rise for 45 minutes. 18. Preheat oven to 400 degrees F. 19. Bake for 15 minutes at that temperature, then turn down to 350 degrees and bake an additional 20 minutes until golden on top and the loaf sounds hollow when thumped. 19. Allow to rest in pans for 5 minutes, then turn out onto racks or tray. 20. Enjoy!!
